Foodie Butterflies, what’s your favorite comfort food? I’ve been a lover of nachos since I was a kid and till this day, it’s still one of my favorite comfort foods.
Nachos are one of only a few dishes that are extremely versatile and can be made in an endless amount of different ways. Since it’s Super Bowl Sunday, I’m sharing my SUPER Easy Chicken Fajita Nachos recipe with you guys, check it out below...
1 pkg. tortilla chips
1 pkg. fully cooked seasoned pulled chicken breast
1 pkg. fajita seasoning
1 pkg. fajita seasoning
1can (15 oz.) black beans, rinsed
2 green onions, chopped
1/2 onion, chopped
1/2 onion, chopped
1pkg. mexican style shredded cheese
Cooking Instruction:
SAUTÉ one half of an onion until tender using 2 tbsp. of olive oil, add chicken and fajita seasoning, let simmer for 5-10 minutes
HEAT oven to 350ºF.
SPREAD tortilla chips onto baking sheet; top with beans, chicken, cheese and green onion.
BAKE 5-10 min. or until cheese begins to melt.
Optional:
For more veggies: sauté half a cup of minced carrots with onion
Serving Tip(s): Serve this dish with any or all of the following condiments...

guacamole
