In the Kitchen: Quick Budget-Friendly Chicken & Vegetable Lo Mein

Hāi Butterflies! I don't know anyone that enjoys Lo Mein as much as I do, it's the perfect nutritional mixture of protein, vegetables, and carbohydrates when done right. My love for lo mein, saving money and easy recipes inspired me to share a quick version of the Chinese meal that I make when I'm hungry and pressed for time. Prepare using the ingredients below; sauté onion, garlic, and bell pepper on medium heat for 2-3 minutes. Next, add chicken breast and tomato, season with black pepper and cayenne pepper and continue sautéing for another 2-3 minutes, then add broth and toss in the veggies and cook for an additional 5-7 minutes or until tender. Prepare noodles as directed on packaging, adding the pre-package seasoning of only one. Finally, add noodles and a tablespoon of sriracha or more seasoning if your taste buds require it. Enjoy!

Ingredients

1/2 of a onion chopped
1/2 of a green bell pepper chopped

1/2 of a tomato (finely chopped) 

4-6 chopped garlic cloves
2 cups of chicken or vegetable broth
2 chicken breast (fully cooked and cut into pieces)
1-2 lbs of mixed vegetables
2 packs of instant mein (noodles)
